KANG is one of the biggest knitting guilds in the country, with over 200 members; there are chapters in the middle of town and on the north side (Knitters North of Town or KNOT), and a new chapter is currently forming in Katy. Meetings are once a month: near the Galleria on the 2nd Tuesday for the main chapter; in Old Town Spring on the 4th Thursday for KNOT; and on Friday (but I'm not sure which Friday -- check with the Yarntopia folks) at Yarntopia for the Katy chapter. Membership is $20 annually, and gets you a 10% discount at Yarns2Ewe, Twisted Yarns, Merribee's, and Yarntopia, so it can pay for itself pretty quickly; it also gets you a discount on many of the workshops and retreats put on by the guild.
All the yarn shops in town are listed under "Local Info" on the KANG website, so check that out, since there may be some you haven't visited yet (and you can read mini-reviews of most of them here). There's also contact information for the officers of the two existing chapters, or feel free to ask me if you've got questions about the guild.
